Stir-fried Pumpkin Vine with Garlic
Overview
Pumpkin vines are sold almost all year round in Pu'er, which is like spring all year round, but the price is different. Pumpkin vines have a fresh and refreshing taste, are rich in crude fiber and vitamins, and can also help digestion. Pumpkin vines can be fried or boiled, but I like to eat them no matter how they are cooked.

Remove old stems from pumpkin vines and tear off the fuzzy outer skin.

Wash the selected pumpkin vines in water and dry them for later use.
