Braised pork ribs

Overview

There may be a few steps, but every detail is taken care of. I’m not good at cooking, but I’d like some advice from the experts! ^_^

Steps

  1. Soak the ribs in cold water for more than half an hour, changing the water twice during this period. Add a little cooking wine to the water to remove the odor.

  2. Blanch in a pot under cold water. Blanching in cold water can force out the "junk" inside the ribs.

  3. After the water is boiled, skim off the foam. This is the so-called "scum"...

  4. After skimming off the scum, you can fish it out and control the water.

  5. Have ingredients ready.

  6. I used two spoons of white sugar, but rock sugar is actually better...

  7. Potatoes can be added in appropriate amounts according to personal preference, or yams can be added, which is more nutritious. Of course it’s okay to leave nothing at all.

  8. Stir-fry the pork ribs in a pan until browned.

  9. Put oil in the pot, add sugar when the oil is hot.

  10. After the sugar is stir-fried, add the pork ribs and stir-fry evenly.

  11. Add ingredients and two spoons of cooking wine, stir-fry until fragrant.

  12. Add water until the ribs are slightly covered. At this time, add two spoons of light soy sauce and half a spoon of dark soy sauce.

  13. After boiling, transfer to pressure cooker. Note that you can continue to simmer in the wok.

  14. Add diced potatoes. Twenty minutes in the pressure cooker is almost enough.

  15. The potatoes are soft and tender, and the meat is fragrant, but there is one last step!

  16. Collect the juice! By the way, adjust the taste of the soup. If you like sweetness, add rock sugar. If it feels bland, add some salt! I think it's just right!

  17. How about pouring the soup on the plated ribs? It’s the best meal in history! ^_^!
