Pineapple Fried Rice

I was delayed by something on the weekend, and finally had the chance to fry up some pineapple fried rice. Fragrant and refreshing!

Cut the pineapple in half and scoop out the pulp. Dice and soak in light salt water, dice carrots, cucumbers, peppers, and ham, mince ginger and garlic

Soak the pineapple for about fifteen minutes, remove and drain. Add a little oil to the pot, add ginger and garlic and stir-fry, then add pepper, carrot, cucumber and ham, add appropriate amount of salt to taste, stir-fry evenly, sprinkle some Sichuan pepper powder and stir-fry evenly

Add rice, stir well, add some chicken essence, stir well
