Clean one hairtail fish and drain the water

Cut into segments

Apply a thin layer of starch on both sides

Heat oil in a flat-bottomed non-stick pan, add hairtail and fry until browned on both sides

Add onion, ginger and garlic and stir-fry until fragrant

Add salt, cooking wine, and light soy sauce
-
Add hot water that is level with the fish body, bring to a boil over high heat, then turn to medium heat and simmer for about 8 minutes

Reduce the juice over high heat, take out of the pan and serve on a plate
