Pumpkin Chicken
Overview
I used to like chicken, duck and goose when I was at home. One of my favorites was the spicy chicken made by my mother, and the other was pumpkin chicken. Later, after I got married, I never knew how to cook but now I can cook some simple dishes. Then I bought chicken and small pumpkins in the supermarket some time ago. I originally planned to make potato chicken and pumpkin rice, but I found it troublesome, so I made pumpkin chicken

The preparation of materials is not so precise because they are all added according to taste. Cut the chicken into small pieces, cut the pumpkin into small pieces. You don’t need to cut the peppers. If you like spicy food, you can cut them. You can use onions and ginger according to your own habits. A small amount of peppercorns and star anise is enough. I don’t like it too numb, so I don’t put too much peppercorns and star anise
-
Pour oil into the pot, not too much, then add peppercorns and star anise
-
Add onions and ginger and sauté until fragrant
-
Add chicken pieces and stir-fry
-
After stir-frying the chicken pieces, pour cooking wine, light soy sauce, and dark soy sauce in order. Dark soy sauce is mainly used for coloring, so don’t put too much

After adding the salt, stir-fry, then pour boiling water until the water covers the chicken pieces, then add the cut pumpkin pieces, add dried chili peppers, bring to a boil over high heat, then turn to low heat and let the flavors in for about 20 minutes. During this time, you can add a little more salt, because pumpkins are sweeter, so you don’t need to add sugar for seasoning. After the flavor is absorbed, reduce the juice over high heat. Because I like the feeling of the meat melting in the mouth, I add more boiling water. If you want to eat something a little more chewy, you can add less water.

Don’t reduce the juice too little and pour it out at the end. Because I usually don’t think about the presentation of the dishes when cooking, so it looks like a home-cooked dish
