Braised chicken shanks
Overview
With the air fryer, the air fryer can basically do all the work of baking and frying. Chicken wing roots are harder to cook than chicken wings, so the air fryer can help.

Make two cuts in the thickest part of the chicken leg, down to the bone.

Put the chicken legs into a large bowl, add 1 tablespoon of light soy sauce, 1/2 tablespoon of oyster sauce, 1/4 teaspoon of pepper, and 1/2 tablespoon of white wine. Mix well first, then add 1 tablespoon of cornstarch, and mix well again.

Place a ceramic plate, spread the chicken legs evenly, and put them into the air fryer.

Set to 400°F and bake for 15 minutes until browned.

Turn chicken shanks over and set to 400°F, about 10 minutes;

Also grilled until deep golden brown.

Place a bowl, add 2 tablespoons of braised sauce, 1 tablespoon of light soy sauce, 1/2 tablespoon of oyster sauce, 2 tablespoons of cornstarch, 1/2 tablespoon of mirin, and 1/2 tablespoon of sesame oil, and mix thoroughly.

Pour into the pot and turn on high heat. Cook until there are big bubbles and a "gas-topped spoon" feeling, then turn off the heat.

Add the chicken legs, stir well and sprinkle with white sesame seeds.
