Overview
A very classic bread with a very soft texture and good drawing effect. It is the most delicious when you tear it in your hands and eat it. It is very suitable for breakfast or afternoon tea. Every time I make this bread, I always finish it quickly, so this time I made 400 grams of flour at once, filling a big plate.

Prepare starter ingredients: 140g high flour, 60g low flour, 16g fine sugar, 4g yeast, 160g water. Mix all starter ingredients and stir evenly with chopsticks.

Cover with plastic wrap and ferment until about 2.5 times in size, the middle is filled with pores, and has slightly fallen back.

Weigh the ingredients in the main dough except unsalted butter (48g): 140g high flour, 60g low flour, 16g milk powder, 60g fine sugar, 3.5g salt, 60g whole eggs, and 36g water.

Add starter and mix well.

Use a bread machine or chef's machine to knead until the expansion stage, add butter, continue to knead until the complete stage, and then put it into a basin.

Cover with plastic wrap and ferment until it is 2 to 2.5 times its original size. After fermentation, stick flour on the dough with your fingers and poke a hole so that the hole does not collapse or shrink.

Take out the fermented dough, deflate it, and divide it into 9 equal parts. There is no need to round it out.

Take one portion and roll it into a long strip of about 30 cm.

Twist the two ends together and make a few turns (just like making twists), and pass the joint through the middle of the dough held in your left hand.

Prepare in sequence and place on baking sheet.

Cover with plastic wrap and ferment in a warm, humid place until doubled in size.

Start the oven at 160 degrees for 30 minutes.

After five minutes, the oven has finished preheating, and the bread dough is placed in the middle rack of the oven for baking.

Take out the baked bread and you can see that it is evenly colored.
