Cut the pork belly into small pieces

Soak the prunes in water until soft, then wash

Blanch the pork belly in cold water, remove and wash away any foam

Put a little oil in the pot, add pork belly and stir-fry over low heat until the oil is released, add ginger slices, chili and star anise and stir-fry until fragrant

Add rock sugar, cooking wine, and light soy sauce and stir-fry until browned

Add the prunes and stir-fry

Add enough water to cover the meat noodles, cover and cook for 30 minutes

Peel potatoes and cut into cubes

Put it into the pot and cook until cooked

Sprinkle in chopped green onion and serve
