Home-style fried soba noodles
Overview
Today I am eating soba noodles. Because buckwheat noodles have a thick texture and are generally not very tasty when cooked, add some meat and vegetables and stir-fry them.

Cut the lean meat into shreds, add 1 tablespoon of cooking wine, 1 gram of salt, a little water, 1 tablespoon of oil, knead evenly, and marinate for 10 minutes.

Wash and cut various side dishes into shreds.

After the water boils, add the noodles and cook until they can be pinched with chopsticks.

Remove the cooked noodles and rinse them with cold water to cool down.

Blanch the mushrooms in the noodles cooking water for just one minute.

Heat the pot, pour in an appropriate amount of oil, add the shredded pork and stir-fry until all colors change.

Add carrots, peppers, mushrooms and sauerkraut and stir-fry for a while until cooked.

Pour a little more oil into the pot, add the noodles and stir-fry for a while, trying to make the noodles covered with oil. It’s best to use a non-stick pan for frying.

Add the shredded pork and garnishes and stir-fry evenly.

You can use a small bowl to mix the soy sauce water, add 1 tablespoon of light soy sauce, half a teaspoon of salt, and 1 tablespoon of water and mix well. If you find it troublesome, skip this step and add it directly to the pot.

Pour the soy sauce water into the pot, stir-fry and mix well.

Turn off the heat, add coriander and mix well.
