There are many ways to make braised pig's trotters, but I only like this traditional way because it is delicious, oily and not greasy, and the whole family praises it.

  1. Cut the pig's trotters into pieces and soak them for fifteen minutes, then wash and set aside.

  2. Put the washed pig's trotters into a pot of cold water and bring to a boil.

  3. After boiling, skim off the foam and cook for five minutes.

  4. Take out, wash and set aside

  5. Heat the oil in the pot, add star anise and stir-fry

  6. Add sugar and stir-fry until the color is slightly yellow.

  7. Pour in the blanched pig trotters and stir-fry

  8. Stir-fry until the pig's trotters change color. Add cooking wine and soy sauce and continue stir-frying until the soy sauce is absorbed on the pig's trotters.

  9. After stir-frying, pour boiling water (add enough at one time), add green onions, ginger slices, cinnamon, peppercorns, bay leaves, rock sugar, cover the pot and simmer for about 40 minutes.

  10. After simmering, remove the onions, ginger, and spices and do not overheat to collect the juice.
