Preparation: Clean and drain the pork (plum meat).

Use a hammer to lightly pound the pork on both sides to soften it.

Mix the pork, ginger, garlic, pepper, Sichuan peppercorns, allspice, oyster sauce, sugar and salt thoroughly and marinate for 30 minutes.

When the time is up and it's marinated, pick out the ginger and garlic and add an appropriate amount of fried powder.

Put a little more oil in the pot than usual for stir-frying. When the oil is 60% hot, add the pork and fry slowly over medium-low heat.
