Kneading noodles. Put the flour in a basin, stir it with chopsticks while pouring water, and finally stir it into a snowflake shape, then knead it into a dough, cover it with a lid or plastic wrap to let it rest;
-
Make the filling. Select and wash the leeks, chop them with a knife and put them in a clean basin. Chop the green onions and ginger into small pieces and put them on top;
-
Crack the eggs in a bowl, heat the pan with oil, pour in the egg liquid at 80% heat, fry until cooked, then chop into pieces and put in the bowl;
-
Grab the agent. Take out the dough, place it on the chopping board, knead it into a long strip, and then use your hands to grasp the dough. Each piece is about 10 grams. You can also use it to cut;
-
Round. After grasping the medicine, use both hands to round it with the palms of your hands and press it into an oblate shape;
-
Mix stuffing. Put all the seasonings into the leek, mix well with chopsticks, then add the eggs and mix well;
-
The mixed stuffing looks like this;
-
Roll out the dough. Use a rolling pin to roll the paste into round slices;
-
Stuffing. Pick up a round piece with your left hand, use chopsticks with your right hand to pick up an appropriate amount of filling, and place it on the dough piece;
-
Pinch the middle of the skin and the upper and lower sides together;
-
Then pinch both sides together and the dumpling is ready;
-
If you find that there are one or two more ingredients in the end, the last few can be wrapped into zygotes, that is, after placing the fillings, cover it with a dough sheet, then pinch the edges together and make a few pleats;
-
Cook the dumplings. Put water in the pot, bring to a boil over high heat, add the dumplings, and then use a spoon or chopsticks to gently stir from the bottom of the pot to prevent the dumpling wrappers from sticking to the pot. Cover the pot, stir gently again after the water boils, change to medium heat, and cook until the dumplings float and are cooked.
-
Take it out as soon as it's cooked, as the skin will break if soaked for too long.
