Remove the white lin from the fresh Pingzi fish, wash the internal organs and gills and set aside.

Rub the whole body with salt and cooking wine, stuff the onions, ginger and garlic into the belly of the fish, and marinate the bottom and body for 15 minutes. Then dry it with kitchen paper and dust both sides with flour.

Put an appropriate amount of oil in the pot. When the oil is 70% hot, fry the fish until both sides are golden brown. Do not flip it back and forth to avoid it falling apart. Fry one side before frying the other side.

Leave a little oil in the pot, sauté the onion, ginger, garlic and star anise until fragrant.

Pour in the fish, add braised soy sauce, light soy sauce, vinegar, sugar, salt and a little water. After the juice boils, simmer over low heat until the juice is reduced.

Tear the green onion leaves into small strips, soak them in hot water and bend them, then sprinkle them on the fish.
