Chicago Pie Pizza
Overview
Chicago pie pizza is a representative of American pizza. Compared with the thin body and sporadic embellishments of Italian pizza, this Chicago pie pizza will make people feel that it is the other extreme of Italian pizza. It has a strong body full of content, and takes the characteristics of American pizza to the extreme, with more meat, more cheese, and more tomato sauce. If it is not tightly wrapped in dough, you will worry that the fillings will burst out. It would be a pity not to try this kind of pizza, so I moved it to my dining table. You won’t know until you eat it whether it tastes amazing or not! A pizza was cut into 8 pieces. My girl ate two pieces until she was exhausted, but she still wanted to eat it, so she took another piece with her before going to work, haha. Because there is corn flour in the dough of this pizza, the crust is very crispy right after baking. Because the fillings are many and juicy, the inside is really soft. The crust is best eaten when it is hot. It will not be so crispy after it cools down. Although the fillings are full of meat, Because there are spinach and mushrooms, you won't feel tired when you eat it. The cheese binds all the ingredients together. When you bite into it, the flavors are blended into one, leaving a fragrant mouthfeel. The sweet and sour tomato sauce not only removes the greasiness, but also adds an aftertaste. All in all, this is a very delicious pizza, from crust to filling. If you like pizza, you must not miss it!

Ingredients
Steps
-
First make the tomato sauce for pizza, you can also buy it ready-made. I made it myself. The ingredients are: 300 grams of ripe tomatoes, 50 grams of onions, one head of garlic, 10 grams of sugar, 2 grams of salt, a small spoonful of chopped dried oregano, and 15 ml of olive oil. Peel and chop the tomatoes, first sauté the garlic and onion with olive oil, then add the chopped tomatoes and sauté until soft, then break into pieces with a cooking stick
-
Stir until thick paste
-
Continue to stir-fry over low heat until the sauce becomes thick and set aside
-
Chop the pork into minced meat, then add salt, black pepper, chili pepper, sweet paprika, garlic powder, fennel, oregano, basil, eggs, red wine
-
Mix thoroughly and marinate for 15 minutes
-
Sauté chopped onion with olive oil until fragrant
-
Add the marinated minced meat and stir-fry until the minced meat changes color. Take it out and let it cool for later use
-
Fry the sliced straw mushrooms in oil until soft and set aside. The bacon was also chopped and fried. I forgot to take pictures of these two frying steps, so I can only explain them in words. I hope you guys will forgive me!
-
Put all the ingredients for the pizza dough in the main ingredient into the bread machine and stir it slightly with chopsticks
-
Start the dough mixing process and knead the dough until smooth
-
Place it in the refrigerator to ferment at low temperature. It will ferment to more than 2 times in size after a dozen hours
-
Divide the dough into two, one large and one small, and let the air rest for 15 minutes
-
Cut the large ones into slices and put them into a 9-inch deep pizza pan. First spread a layer of mozzarella on the bottom, then spread the fried bacon and minced meat evenly
-
Then spread another layer of mozzarella
-
Put the fried straw mushrooms on top (you can also put the straw mushrooms on the minced meat and mozzarella on top.)
-
Finally, place the spinach that has dried surface moisture on it
-
Unroll the small dough and spread it out, press it lightly to make the fillings evenly distributed, then make a cut and pinch the edges of the two pieces of dough tightly
-
Finally, spread a thick layer of tomato sauce on the surface and sprinkle with shredded cheese
-
After preheating the oven to 210 degrees, bake in the oven for 30 minutes
-
When the dough is browned, take it out to cool for a while and then unmold and cut into pieces.
