Korean Cold Soba Noodles
Overview
This is a Korean cold noodle dish based on mashed raw radish. The spicy taste of raw radish may be a little hard to accept at first, but as you eat it, you will slowly fall in love with it.

Prepare the ingredients in advance and chill a pot of water or ice cubes

Wash the white radish and cut into small pieces

Peel the cooked quail eggs and cut them in half, wash and grate the cucumber

Add a little ice water to the cut white radish and puree it

Add water to the pot and bring to a boil, add soba noodles, cook, remove, and rinse with cold water.

Pour the washed soba noodles into ice water (or ice cubes) and soak them

Chop the green onion, put it into a bowl, add mustard, white radish puree, light soy sauce, salt, sesame oil and appropriate amount of ice water to make soup.

Add chilled soba noodles

Place cucumber shreds, quail eggs, and pickles on top and stir well before eating.
