Kuaishou Noodle Soup
Overview
During festivals, when I get tired of eating meat and sweets, I can’t help but make myself a bowl of Kuaishou noodles. It’s just because it’s Kuaishou and it’s simple. Boil the chopped onions, ginger, garlic and favorite seasonings and add them to the cooked noodles and green vegetables. Add a watered egg and you have a refreshing bowl of noodles.

Prepare the ingredients;

Chop onion, ginger and garlic and set aside;

Put the chopped green onion, minced ginger and minced garlic into a large bowl, pour in appropriate amount of light soy sauce, balsamic vinegar, a little salt and sesame oil and set aside;

Pour water into the pot and bring to a boil. Pour two tablespoons of water into a bowl. Dissolve the seasoning while it is hot and set aside;

Put the noodles into boiling water until medium cooked;

Add the vegetables and noodles and cook until cooked through, turn off the heat;

Take out the noodles and put them into the seasoning soup;

Turn off the heat and break the eggs into the hot noodle soup pot while it's still hot. Cover the pot and simmer for five minutes without stirring;

Finally, add chili oil to the noodles and mix well (I don’t like MSG so I don’t add it);

Take out the eggs and put them on the noodles and eat.
