Prepare the ingredients

Cut carrots into hob pieces and set aside

Soak the cured duck legs to remove the salt one night in advance and clean them

Boil water in a pot, add cold water to the duck legs, blanch them for 2 minutes, then rinse them in cold water

Heat oil in a pan, add rock sugar, and simmer over low heat until the sugar turns slightly yellow

Add the spicy duck legs and stir-fry until fragrant, add cooking wine and an appropriate amount of water and simmer over low heat for 30 minutes

Add carrots and simmer for another 5 minutes to reduce the soup
