Prepare all ingredients

Blanch the pig's trotters in a pot, drain and set aside

Pour a little oil into the pot, add the chopped onion, ginger and garlic and stir-fry until fragrant, then add all the spices and stir-fry until fragrant, set aside

Pour a little oil into the wok, add the rock sugar, and stir-fry over low heat until the rock sugar turns amber (I didn’t have time to take a photo at this step for fear of burning the pan)

Pour the blanched pig's trotters into the pot, turn on medium-low heat and stir-fry until browned

Add the fried spices and continue to stir-fry until the flavors are infused

Pour in the cooking wine, light soy sauce, and dark soy sauce and continue to stir-fry evenly. Pour in boiling water (the amount of water is enough to foam the pig's trotters), bring to a boil over high heat, then turn to low heat and simmer for about 70 to 80 minutes

Try using chopsticks. If the meat is rotten, turn on high heat to remove the juice

Take out the pot, put it on a plate, and start eating
