Steps
-
Prepare the ingredients and peel the pumpkin
-
Cut the pumpkin into thin slices, chop the tomatoes, and cut the peppers and green onions into shreds (you can cut them into any shape you like)
-
Turn on the pot and heat it up. When the pot is hot, pour in a little cooking oil. When the oil is hot, add onions and chilies and saute until fragrant
-
Add pumpkin
-
Stir-fry the pumpkin for a while, then add the tomatoes and stir-fry
-
Stir-fry the pumpkin and tomatoes for a while, then pour in a bowl of water and simmer for a while
-
When the pumpkin is cooked until soft, add enough water to cook the noodles and bring to a boil over high heat
-
While the water is boiling, prepare some green vegetables you like, such as rapeseed or Chinese cabbage. I used leeks
-
After the water is boiled, add the noodles. I used dried noodles. In fact, it’s best to roll the noodles by hand. I found it too troublesome to eat by myself, so I used dried noodles
-
When the noodles are cooked, add the leeks and season with appropriate amount of salt and chicken essence
-
When it comes out of the pot, the soup is rich and bright in color. The pumpkin is slightly sweet and the tomatoes are slightly sour, which greatly increases your appetite
