【Sichuan】Cold Eggplant

Overview

Very delicious cold eggplant, also very delicious for cooking. I remember growing eggplant seedlings at home when I was a child, and they would produce eggplants. My favorite thing was to eat the cold eggplants made by my mother. The smell of garlic and vinegar made me greedy. Having said this, I couldn't help but swallow a mouthful of saliva:)

  1. Two eggplants. I like to eat local eggplants, very tender bamboo shredded eggplants

  2. Cut into strips and soak in water to prevent oxidation

  3. Place on a plate and steam for 6 minutes

  4. Use a garlic press to press the garlic into puree. Use a small bowl to mix the garlic paste, light soy sauce, vinegar, sugar, salt and sesame oil

  5. Cut the green and red peppers into small circles and add them
