Duck Wings and Carrot Soup

Cut the white radish into hob cubes and chop the duck wings into small pieces (forgot to take pictures).

Boil water in a pot, put the duck wings under cold water, add cooking wine, ginger slices, green onions, bring to a boil over high heat, then reduce to low heat and simmer for 2 minutes, skim off the foam.

Take out the duck wings and rinse them under running water.

Add enough water to the pot, pour in the duck wings, bring to a boil over high heat, then reduce to low heat and simmer for about 30 minutes (until they are tender, use chopsticks to poke them to test).

Add the white radish and stew until cooked through (chopsticks can poke through, but don't make it too rotten).

Add salt, a little chicken essence, white pepper to taste, and heat to taste.

Remove from pot and serve on a plate, sprinkle with chopped green onions.
