Wash and chop the ribs into pieces and set aside.

Heat oil in a pan, add sugar and stir-fry until brown.

Add the ribs.

Stir-fry until browned.

Add onion and ginger segments and stir-fry until fragrant.

Add soy sauce and Maggi and stir-fry until fragrant.

Add water, salt, star anise and cinnamon, stir well and bring to a boil.

Cover and simmer over low heat for 1 hour, then use high heat to reduce the juice and serve.
