Twice-cooked pork with garlic sprouts
Overview
A famous Sichuan dish, it is almost the most ordered dish in restaurants. I like to fry the pork belly a little dry so that it doesn't taste so greasy.

Add ginger slices and scallion segments to boiling water to remove the fishy smell. Add pork belly and cook until the skin can be inserted with chopsticks. Remove from the pot and let cool before slicing.

Chop the bean paste into fine pieces

Put the pork belly into the oil pan and fry until the pork skin is slightly brown, then take it out.
