The braised pork soup I make should belong to the Anhui cuisine, with an authentic taste of my hometown. I have loved eating the braised pork soup made by my mother since I was a child. Now I make it myself. Children who don’t like meat can also eat a lot of meat because the soup is fresh and the meat is tender. Let’s take a look at the operation method.

  1. What I bought was plum meat, which was lean and tender. Because I had a baby to eat it, I didn’t choose the fat one. First, chop the washed meat into pieces, and prepare the onions and ginger.

  2. Add an appropriate amount of salt. I added the right amount of salt here. I will not add salt to the soup later. Add a spoonful of light soy sauce to enhance the freshness and two small spoons of dark soy sauce. The role of the dark soy sauce here is to make the meat in the soup look better. Add five or six drops of vinegar. The vinegar can remove the fishy smell and make the meat tender. After adding the seasoning, use clean hands to knead evenly.

  3. Add an appropriate amount of starch, I just grab a handful. I use the sweet potato flour processed by our hometown, and then knead it evenly and set aside.

  4. Add water, shredded ginger, green onion and a little cooking oil to the pot (it will be more fragrant if there is lard). We usually don’t eat lard, so we directly cook the oil. If you have babies, you can add an appropriate amount of baby cooking oil after it is done, cover and bring to a boil over high heat.

  5. Use chopsticks or clean hands directly to put the prepared meat into the pot little by little, and then bring to a boil over high heat. Note that you must cook for a few more minutes after boiling, so that the meat will not have a residual fishy smell. (If you want to add some vegetables, tomatoes, etc., the vegetables can be slid down in the pot first, and then added together with the meat. The tomatoes can be boiled when the water is boiling and then add the meat).

  6. Beat the eggs and mix well. Let it boil for a few minutes, then add it to the pot and bring to the boil again.

  7. Finally, sprinkle with chopped green onion and serve. (We have a baby over one year old, so we don’t add chicken essence and MSG to our diet. However, this also retains the freshness of the meat. We add light soy sauce in front to enhance the freshness. If you are used to eating chicken essence or MSG, you can add a little chicken essence to season before adding the eggs).
