Wash the hairtail fish and drain it. Heat the oil in the pan and sauté the onions, ginger and garlic.

Fry the hairtail until both sides are lightly browned.

Add cooking wine. Two thirds braised soy sauce and one third light soy sauce. Add a small amount of sugar and water to the same height as the fish body.

Bring to a boil over high heat and simmer over medium heat. After about fifteen minutes, reduce the heat to reduce the juice, sprinkle with chopped green onion, plate and serve.
