  2. Then peel the square melon and grate into shreds

  3. Add appropriate amount of salt and marinate for a while. This step is to remove excess water from the square melon. But it should be noted that salt has already been added in this step. Do not add more when adjusting the filling later, otherwise it will kill people

  9. Take out the dough and deflate it, knead it evenly, then roll it into a long strip and divide it into appropriate segments

  10. Then wrap them into buns. After everything is wrapped, ferment them in a pot for 10 to 15 minutes, and then steam them. I use an automatic electric steamer and select the steamed bun option. The buns will be cooked in 20 minutes and the steamer will start steaming in about 2 minutes
