Pumpkin, Sausage and Egg Fried Rice
Overview
I was so busy that I just had time to post the recipe 😓 I saw that there wasn’t much rice tonight, so I decided to make some fried rice. I don’t have many other vegetables at home, but the pumpkin is harvested from home. This time I used shredded green pumpkin and paired it with a few sausages, two eggs, and a little green onion. It’s a delicious one-pot meal 😄

Cut the pumpkin into shreds, shred the green onion, soak the sausage in boiling water and slice it into pieces. Beat the eggs with some cooking wine and salt

Heat oil in a pan, fry the eggs over low heat, spread them out and set aside

Heat oil in a pan, add pumpkin shreds and stir-fry for three minutes

Push the pumpkin shreds aside, add the green onion shreds and sausage and stir-fry for a minute

Put the rice in the pot, add some water to the edge of the pot, cover the pot and simmer for 1 minute

When the water dries up, add eggs and stir-fry

Add some cooking wine, light soy sauce, and pepper, stir-fry, and finally add an appropriate amount of salt
