Omelette and Cured Rice Claypot Rice
Overview
Claypot rice, as the name suggests, is rice cooked in a small claypot. It is probably unique to Guangdong. There are many small shops selling claypot rice in Guangzhou, usually on the roadside. A row of stoves are filled with steaming claypots, and a chef is patrolling back and forth with bamboo chopsticks, just like a wheel battle in Go. Such food stalls are usually exclusive, and they also provide free soup. There are the most porridge and noodle shops on the streets of Guangzhou, followed by dessert shops and then small claypot rice shops. I worked in Guangzhou for a year and especially loved Cantonese food. Guangzhou's snacks are exquisite and exquisite; its soups are delicious and nourishing; and its dishes are exquisite in shape and taste. For a foodie like me, going from my hometown of Sichuan to Guangzhou is like going from one food paradise to another. Claypot rice is one of the street foods that impressed me very deeply. Soak fragrant rice in water for 4 hours. Use fragrant rice to make it more chewy and fragrant. It doesn’t matter if you don’t use other rice instead. Don’t use glutinous rice.

Make bowl of sauce. Add a small teaspoon of oyster sauce, a spoonful of light soy sauce, a few drops of pepper oil, and a little cold boiled water and mix thoroughly.
