Crush the biscuits with a food processor. This biscuit is a fiber biscuit I made myself. You can buy digestive biscuits or Oreos instead.

Butter fuses with water.

Mix melted butter and biscuit crumbs thoroughly.

Pour into a 6-inch removable bottom round mold, flatten and compact firmly, then place in the refrigerator for half an hour.

Soak 2.5 gelatine sheets (12.5g) in ice water and set aside.

The cream cheese is fully softened at room temperature (if the temperature is low in winter, you can soften it in water).

Add sugar and beat with a whisk at low speed until smooth.

Add yogurt and mix well.

Add lemon juice and mix well.

Drain the water from the soaked gelatine sheets and melt it in running water.

Mix the gelatin liquid and cheese paste.

Pour the milk into the pot and heat over low heat.

Add appropriate amount of red yeast rice powder and boil (monascus powder cannot be eaten raw).

Sieve the red yeast powder liquid to remove undissolved particles and let it cool for later use.

Beat the light cream until it just forms texture and will drip when you lift the whisk.

First mix half of the light cream and cheese paste evenly, then pour back into the remaining light cream and continue mixing evenly.

Divide the mixed cream cheese paste into two equal portions. Add a little more red yeast powder to one portion, which will turn into dark red color, and add a little less to one portion, which will turn into light pink color.

First pour the dark red cheese paste into the mold that previously placed the biscuit base, and place it in the freezer of the refrigerator for 25 minutes.

Then pour the light pink cheese paste on top of the previously frozen layer and continue to refrigerate for more than 2 hours.

It is best to soak the cherry blossoms in cold water in advance. Although it takes longer, the colors are brighter.

Deflate the Sprite. (The fastest way is: pour Sprite into the eggbeater and stir quickly with a manual eggbeater.)

Soak 10g gelatine tablets until soft and then melt into liquid over water. Then mix with Sprite.

Pour the mixed Sprite on top of the chilled cake and decorate with cherry blossoms.

Place in the refrigerator to chill until the mirror surface solidifies into a jelly-like shape and can be removed from the mold.
