Half a native chicken, washed and set aside.

One sour papaya, washed and peeled, seeds removed and set aside.

Add chicken fat and lard in a wok, cut out the oil, add ginger, dried chili peppers, peppercorns, grass fruits, star anise, and a small amount of sugar and stir-fry until fragrant.

Add the chicken to the pot and stir-fry until it is almost cooked. Add thirteen spices, cooking wine and salt halfway through.

Put the fried chicken into a cooking pot, add boiling water (less water than stewing chicken soup), add green onions after the water boils, and cook for half an hour.

When it's cooked, add sour papaya and cook over low heat for another 20 minutes. Add a small amount of chicken essence before putting it in the pot. The chicken is very tender and appetizing. The soup is very delicious (you can add more water for heavy flavors).
