Homemade sweet wine

Prepare 500g glutinous rice

Clean and soak for 24 hours. Change the water several times in between.

After 24 hours, the glutinous rice can be broken into pieces with your fingers

Drain the water, pour appropriate amount of water into the pot and steam for about 30 minutes. Turn once halfway through until cooked through.

Prepare three containers, clean them to ensure there is no oil or water, and scald them with boiling water to sterilize them. (If there is oil and water, hair will grow easily)

Steamed glutinous rice

Pour into a clean container and let cool

Prepare 380g of cold boiled water and pour it into the glutinous rice, and then pour in 4g of angel liqueur koji to ensure that the glutinous rice is completely cool. (The glutinous rice must be cooled thoroughly. If the temperature is too high, the koji will go bad. If it is winter, the temperature of the glutinous rice should be about the same as the temperature of your hands.)

Wear disposable gloves to separate the glutinous rice that is stuck together

Pour into a sterilized oil-free and water-free bread machine bucket. The surface is compacted and a hole is poked in the middle.

Start the bread machine and ferment for 24 hours. If you don’t have a bread machine, you can ferment it at room temperature in summer, about 28-30 degrees.

If a lot of rice wine comes out after 24 hours, it means the fermentation is successful
