Simplified version of Yao Zhu moon cake
Overview
I happened to have Yao Zhu, so I took out the Yao Zhu mooncake I had made before, cut out many of the fruit ingredients, and used the most common walnuts and peanuts to make a simple version of the Yao Zhu mooncake. It seems to be no less good. . . .

Fillings: 50 grams of sugar, 12 grams of corn oil, 64 grams of cooked flour, 90 grams of ice meat, 20 grams of sesame seeds, 20 grams of walnuts, 95 grams of peanuts, 50 grams of scallops, 6 grams of orange cake, 2 grams of white wine, 2 grams of salt, 0.2 grams of pepper, and 10 grams of water.

Wash the scallops and add white wine. Place in a pot of boiling water and steam for 15-20 minutes until cooked.

Take out, let cool and then tear into pieces. Spare.

Chop all the nuts and orange cake, pour into the bowl with the scallops, and mix evenly.

Add ice cubes, sugar, salt, pepper and mix well.

Add cooked flour and mix evenly.

Until it can form a ball.

Divide into 15 equal parts.

Cake crust: 150g low-gluten flour, 90g invert syrup, 38g peanut oil, 2g alkaline water.

Pour the alkaline water into the inverted syrup and stir evenly.

Add oil and mix well.

Pour in flour, mix into a uniform dough, wrap in plastic wrap and let rest for half an hour.

Divide into 15 equal parts.

Take a piece of pie crust, flatten it and add the fillings.

Push the pie crust up and wrap it up. Close and round.

Place into floured molds.

Buckle it on the countertop and press it down firmly. Lift the mold and gently release it.

Place in a baking pan and spray water on the surface.

Place in the preheated oven, middle layer, with upper heat at 200 degrees and lower heat at 170 degrees, and bake for about 5 minutes.

After setting, take it out and brush the surface with egg wash.

Place back into the oven and bake for about 10-15 minutes. The surface is golden brown and comes out of the oven.
