Braised Hoof Pork in Red Wine
Overview
The trotters are also elbows. When the taste reaches 12, they are braised in red wine. I have always wanted to try it. I am used to making Chinese-style braised pork, and I suddenly tried to cook it in the Western way. I felt unsure and didn't know what the result would be. When it was ready and served, I waited for my family to comment and they all said it was good. Maybe I had eaten too much Chinese-style braised pork. I suddenly changed the taste of this Western food. It feels fresh. Anyway, everyone can eat well.

Steps
-
I used boneless hooves, put cold water into the pot, added Sichuan peppercorns and bay leaves
-
Add white vinegar. The purpose of adding white vinegar is to remove the fishy smell, and to make the skin more delicious.
-
After the water boils, cook for a few minutes and take it out
-
Cut the onion into hob pieces and prepare star anise, peppercorns, cloves, garlic and bay leaves
-
Put a little oil in the pot and sauté the seasonings except onions
-
Then add onions and fry until fragrant
-
Add appropriate amount of braised soy sauce for coloring
-
Put in the hoof
-
Add boiling water to make it even with the hooves, add red wine
-
After boiling over high heat, turn to low heat and simmer for 40 minutes. After turning off the heat, continue to cover and soak for half a day to let the flavor of the hoof be absorbed
-
Take out the stewed hoof and slice it into slices
-
Put a small amount of butter in the pot, fry the diced carrots and onions, add an appropriate amount of special soy sauce and fry until cooked
-
Put the fried diced vegetables into a plate and put the cut ham on top.
