Grilled hairtail
Overview
Yesterday I marinated a little too much hairtail and fried part of it. There was some left over and I made braised rice today. It tastes really great when paired with a bowl of rice and soup.

Steps
-
I marinated the hairtail fish yesterday but I didn't finish it and just used it today. Pickled with shredded ginger, cooking wine and salt
-
Put oil on the pan and coat the bottom of the pan evenly, not too much. Otherwise, it will be too oily, then put the hairtail separately
-
Don't leave the pan while frying. Keep turning twice in the middle. Don't make the fire too big.
-
Change the wok and add some oil. Add the sugar and bean paste and mix well until the sugar dissolves
-
Add an appropriate amount of cooking wine. No need to add salt during this period. The bean paste is very salty and the hairtail has been salted in advance
-
Add a small amount of water and when it boils, put the hairtail in
-
Cover and simmer for a while. Just use low heat.
-
When the juice is almost reduced, sprinkle some chopped green onion into it. Plate
