Spicy stir-fried wings
Overview
Chicken wings are children's favorite food. The meat is tender and delicious, and it tastes delicious no matter how you cook it. Soak the purchased chicken wings in cold water, check and clean the impurities on the chicken wings that have not been cleaned, then clean them repeatedly and remove them for later use.

Add an appropriate amount of water to the pot, add the cleaned chicken wings and blanch them to remove the fishy smell and impurities, then add boiling water to the pot, add peppercorns, aniseed, cooking wine, bay leaves, ginger and other seasonings, add the blanched chicken wings, continue to boil over high heat, cook over medium to low heat, be sure not to overcook.

Remove the cooked wings to drain and set aside. Peel, wash and chop the onions, peel and chop the ginger.

Add an appropriate amount of oil to the wok, sauté the onion and ginger until fragrant, add the bean paste and stir-fry until the red oil comes out. Because it is for children, I don’t add too much bean paste. If you can tolerate spicy food, you can add more.

Add the chicken wings and stir-fry. You can add a little less water to make the chicken wings more flavorful.
