Chestnut Braised Chicken
Overview
Chicken is always indispensable during the Chinese New Year. This time I brought some local chickens from my parents’ house and quickly cooked a plate of chestnut braised chicken to satisfy my craving!

Shell the chestnuts. Heat hot water in a small pot, cook chestnuts for 5 minutes, drain and drain.

Boil the chicken in a pot of cold water, skim off the floating bits and wash the chicken.

Wash and slice ginger and garlic.

Pour corn oil into the pot, add chestnuts when the oil is hot, and stir-fry for a while.

Fry the chestnuts until they change color, then remove and set aside.

Add the ginger, garlic and peppercorns to the oil used to fry the chestnuts, and stir-fry until fragrant.

Add the chicken, stir-fry for a while and then add the chestnuts.

Add an appropriate amount of hot water to the pot, pour in the soy sauce, cover the pot, and simmer over medium-low heat for about 20 to 30 minutes. The chicken is cooked through. If the water content decreases during this period and the chicken is undercooked, you can add hot water and continue simmering as appropriate.

After simmering until there is a little water left, add salt and stir-fry, continue to cover and simmer until the soup is gone, then remove from the pot.

The finished chicken is fragrant and the chestnuts are soft and glutinous.
