Oatmeal noodles are the staple food of the people in Bashang, Zhangjiakou. We basically eat them three or four times a week, especially 90% of the older generation. Oatmeal noodles and potatoes are a perfect match. These two combinations can make a variety of delicious dishes. Every housewife will make various kinds of oatmeal rice. Chop the leeks and set aside.

Cut two potatoes into small cubes and pour them into the pot with leeks.

Add salt, sesame oil, chicken essence, pepper powder and sesame oil and mix well.

Put the oatmeal noodles and potato starch in a clean basin and mix well.

Add freshly boiled water to the basin while stirring with chopsticks. Add water little by little until the noodles are mixed and there is no dry powder.

Wait for a while and knead the dough with your hands. It may be a little hot. Knead slowly until the dough is smooth and there is no flour left in the bowl.

Take a small piece of dough and roll it into a round shape. .

Flatten the small dough with the palms of both hands, and use your thumb, index finger and middle finger to slowly thin the dough from the edge little by little.

When you pinch it little by little, you can also use your fist to push it a few times, and finally knead it evenly into a bowl shape.

Use a spoon to pour the stuffing into the pinched dumpling wrappers.

Pinch the edges of the dumpling skin, leaving a small mouth at the bottom to prevent them from cracking during steaming.

Just knead the dumplings one by one until they are completely wrapped. During the wrapping process, you can pad one side of the basin with the dumpling fillings with a cloth to allow the soup to flow to one side.

Boil water in a steamer in advance. When the water boils, add the wrapped dumplings and steam them for fifteen minutes. When they feel almost done, you can use chopsticks to taste the potatoes and they are done.
