Garlic Spicy Shrimp
Overview
It would be a shame not to eat some small shrimps in spring. There is a kind of grass shrimp that is not too small and cannot grow even an inch. It is too tough to stir-fry with leeks. You might as well try eating it like this, it is more delicious.

Wash the ingredients and prepare them. Cut off the tentacles and the hard shell part of the head of the shrimp. The shrimp I chose is a 3cm larger grass shrimp, so it needs to be processed, otherwise it will prick the mouth

Crush the garlic and mince it into puree, cut the dried chili into large pieces, shred the ginger, and mince the green garlic

After processing the shrimps, add cooking wine, pepper, light soy sauce, salt and marinate for a while

Sprinkle the chili powder evenly to taste, and decide how much to add according to your own taste. If you don't like spicy food, you can omit it

Pour in flour and mix well, sprinkle with bread crumbs and coat evenly

Preheat the pan, pour in two tablespoons of oil, heat the oil until it is 60% hot, then add the shrimps for frying

Fry until golden brown, then take it out and pour out the oil

While there is a little oil in the pot, pour in the minced garlic and chili pepper and stir-fry until fragrant. Add in the shrimp and stir-fry to coat with the minced garlic flavor, then turn off the heat. Add in the chopped green garlic and sprinkle with black peppercorns to garnish and serve.
