Stewed pork ribs with lotus root and carrot
Overview
The weather is getting colder, so I want to eat something steaming, and I even have soup and vegetables in one pot. My eldest daughter especially loves to eat pork ribs soup. She stewed corn pork ribs soup last week and wanted to eat it again this week. I went to the market to buy corn but couldn't find it. I saw that the lotus roots were good, so I bought two lotus roots and cooked them with the ribs. My daughter's physical fitness is very good, she is not picky about food, and the results of every physical examination in kindergarten are very good. I think it has a lot to do with diet. This pork rib soup is stewed, the meat is fragrant and not greasy, it is worth recommending! The way I make pork rib soup is the laziest way, but I personally think this method is the most authentic. It doesn’t use so many seasonings, and you don’t have to waste time in the kitchen. Moreover, the soup tastes very good, and the ribs are rotten. With the lotus roots and carrots in it, it is very suitable for children to eat. So every weekend, whenever I eat at home, I will cook a pot of pork rib soup, which tastes warm. In addition to the ingredients, the tools are also very simple. Just use a pressure cooker and in less than an hour, the delicious pork rib soup will be on the table!

Ingredients
Steps
-
Clean the ribs;
-
Put it into a soup pot with cold water and bring to a boil over high heat;
-
After the water boils, the blood foam in the ribs will be boiled out, and it only takes two minutes;
-
Peel and wash lotus root and carrot;
-
Cut into hob pieces;
-
After the ribs are cooked, rinse with warm water and drain;
-
Cut green onions and ginger into sections or slices;
-
Put the ribs, carrot chunks, lotus root chunks, green onions and ginger slices into the pressure cooker, add warm water and an appropriate amount of salt;
-
Cover the pot, use the pork ribs program, and select rich taste; the time displayed on the pressure cooker is 15 minutes, but there is a boiling time in the front and a deflation time in the back, so the total time must be at least 30 minutes;
-
When the time is up, the pressure cooker will beep. If you are not in a hurry, you can wait for the pressure cooker to cool down and deflate naturally, or you can press and hold the release button to manually vent. After the deflation, you can open the lid of the pot. You can taste the taste. If the salt is not enough, you can add a little salt, open the lid and cook for a few minutes (tip: not all electric pressure cookers can be heated with the lid open). You can also add some black pepper for freshness.

A bowl of pork ribs soup with the fragrance of carrots and lotus roots is ready. The crispy bones on the ribs are delicious.

You can also replace the lotus root with sweet corn, which is also delicious. The soup is not greasy either, and even my kids can drink a big bowl of it. The lotus root and carrot inside also have a soft and waxy texture.
