Remove the chestnut shells and cook for 3 to 5 minutes

Remove and peel off the skin and set aside

Blanch the chicken legs for 5 minutes, remove and wash off the blood foam and set aside

Prepare onions, ginger and spices

Wash the pot, heat it up, pour in appropriate amount of oil, add peppercorns and star anise and stir-fry until fragrant

Add onions and ginger and stir-fry until fragrant, then add chicken thighs and stir-fry evenly

Add light soy sauce

Add dark soy sauce and stir-fry evenly

Pour in water level with the meat and bring to a boil over high heat for five minutes

Add chestnuts and simmer over low heat for 10 minutes

Add an appropriate amount of salt and turn to high heat to reduce the sauce until the soup is thick
