It was my first time to try snowskin mooncakes, and the fillings made of adzuki beans and barley came in handy!

  1. Weigh all ingredients.

  2. Mix all ingredients except cooked glutinous rice flour.

  3. Steam over high heat for 15 minutes and stir well.

  4. Cover with plastic wrap, take out a small portion and press it into a skin.

  5. Wrap the prepared stuffing, roll it in cooked glutinous rice flour, and put it into a mold and press it into shape.

  6. When everything is done, cover with plastic wrap and refrigerate overnight.
