Prepare the meat. Normally, you should use fat and lean meat. Since I don’t eat fatty meat, I chose tenderloin and chopped it into minced meat.

You can add less onion, ginger, and garlic. I only have ginger at home, so I just add a few slices and mince them with the meat filling.

Add two spoons of light soy sauce, half a spoon of cooking wine, appropriate amounts of salt and pepper to the minced meat filling. If you don't want to eat it with salt and pepper, it is recommended to put more, mix well, and leave it for about half an hour to let the flavor in.

Wash the eggplant, cut it into small sections, make a hole in the middle of each section and add the meat filling.

Put dry starch in the plate, put the eggplant box in, and dip both sides in starch. You can also put it into wet starch and then dip it in a layer of wet starch. My dad likes to put eggs in the batter when making it, which is also a method, but I personally like the texture of dry starch and wet starch

Put oil in the pot, put in the eggplant box and fry when it is about 70 to 80% cooked, use chopsticks to turn both sides, it will be ready in about three or four minutes. The second pot will be ready in about two minutes.
