Prepare the ingredients, (just two egg yolks)

Crush the potatoes into a puree with a spoon, add sugar and mix well. Mix well with 15 grams of starch. Use another five grams of starch to wrap around the potato balls

Divide the mashed potatoes into ten-gram portions, roll them into small balls, and turn them around in a starch bowl to coat the skin with a layer of starch. Complete them all in sequence.

Heat the oil until it is 40% hot, add the prepared potato balls, fry them over medium-low heat until the surface is golden brown, remove and control the oil

Leave the base oil in the pot, crush the egg yolks, add them to the pot and fry until bubbles appear

Add the fried meatballs, stir well and remove from the pan.
