【Henan】Stir-fried and smoked dried winter bamboo shoots
Overview
We have a lot of soybean products here, which are also considered local specialties. Among them, there is a brand of dried tofu that is very good and has several varieties. My favorite is their smoked dried tofu, which tastes very good and is delicious whether it is stir-fried or cold. I personally also love soy products. Since I am the chef at home, soy products appear frequently on my dining table. Today, I used the winter bamboo shoots that are currently in season to go with the smoked dried vegetables. I saw shepherd’s purse in the vegetable market in the morning and bought some. The fresh ingredients are paired with smoked dried vegetables. The fried vegetables are very popular. After several stir-fried dishes, it was eaten up first.

I specially found a picture of spring bamboo shoots taken in spring. I can see it clearly by comparing it

Cut the winter bamboo shoots into shreds, boil them in light salt water for 15 minutes, and then soak them in cold water to remove the astringency. I forgot to take a picture of the cooking, so I explained it in the text.
