Preparation: Pomfret.

First, prepare the pomfret, make cuts on the fish, and apply a little salt and rice wine to make it easier to taste and cook. Prepare ginger and garlic.

Heat the pan and add oil. A little more oil is used for semi-frying, so the fish skin will be crispier.

Flip and fry the other side for about five minutes. The meat of the pomfret is thicker, so flip it several times and fry it until it is cooked through.

Fry until both sides are golden brown, add ginger slices and garlic and stir-fry over low heat until fragrant.

When the fish is cooked, shovel it out and put it on a plate, stir-fry the ginger and garlic with the oil, and mix in a little soy sauce and sugar.
