Prepare all materials.

Cut the chicken legs into small pieces, blanch them in water, wash and dry them.

Marinate the blanched chicken pieces with light soy sauce and dark soy sauce for more than ten minutes.

Cut onions, green peppers, and red peppers into triangular pieces.

Slice ginger and garlic, cut scallions into sections, and mince chilies.

Add a little rapeseed oil to the pan and fry the chicken pieces until cooked.

Add a little rapeseed oil and sesame oil to the wok, add onion, ginger and garlic and sauté until fragrant.

Pour in the fried chicken pieces, stir-fry a few times, then add rice wine and soy sauce for marinating the chicken pieces to taste. Cover the lid, bring to a boil and simmer over medium-low heat for 15 minutes.
