Chicken Stewed Vermicelli
Overview
This chicken stewed vermicelli is one of the dishes that my husband’s classmate made at home a few days ago. Everyone loves to eat vermicelli in chicken, so they added more vermicelli to inhale the aroma of chicken, and it was very popular.

Heat the water in the pot, add the chicken pieces and stir-fry to remove the blood

Take it out and wash it with clean water to remove the moisture

Chop onions and ginger and set aside, star anise, bay leaves, and peppercorns for later use

I soaked the vermicelli in water and set aside. I thought there wasn't much vermicelli, so I added some wide vermicelli later

Heat oil in a pot, add sugar and fry over low heat until sugar changes color and bubbles

Quickly add the chicken pieces and stir-fry over high heat

At the same time, add light soy sauce, cooking wine, five-spice powder, green onions, ginger, star anise, and bay leaves

After frying, move it into the pressure cooker, add water and salt, and simmer. When the pressure cooker starts blowing air, start the timer and simmer for 20 minutes

After 20 minutes, open the lid, add vermicelli, and simmer for another 3 minutes
