Yogurt mousse
Overview
This yogurt mousse was ordered by a customer as a birthday cake for his fifth-grade daughter. Last year, I made a Barbie doll cake here and I was very satisfied. For my birthday this year, I was asked to create a beautiful cake. So I thought about it and decided to combine fondant and mousse. It would be very beautiful. Prepare 2 pieces of six-inch chiffon cake and wrap the mold with tin foil as shown.

Prepare raw materials

Take 100 grams of yogurt (refrigerate for at least half an hour in advance), heat it over water (70 degrees), add gelatine slices, and dissolve completely. Stir occasionally.

Add the melted yogurt to the remaining 150 grams of yogurt and mix well.

Add animal fresh cream and sugar and beat until 60% fluffy, as shown in the picture.

Pour the yogurt gelatin solution into the cream, stir gently with a hand mixer, and the mousse paste is ready

As shown in the picture, there is one layer of mousse paste and one layer of cake, a total of two layers

Smooth the surface, preferably leaving space at the edges of the mold. Refrigerate for at least 4 hours

Heat 50 grams of water and a pack of QQ sugar to melt, then let cool

Pour onto the surface of the refrigerated mousse and refrigerate for 1 hour to form a red mirror surface. Demold (wrap a hot towel around the side of the mold, or use a hair dryer)
