【Sichuan】Roasted Duck with Potatoes
Overview
This roasted duck with potatoes is a real home-cooked dish. It does not have too many seasonings and only uses Pixian bean paste. It is not only beautiful in color, but also delicious in taste, and there is no fishy smell of duck. For me, an authentic Sichuanese, I can make the taste of my hometown just by giving me the bean paste.

Ingredients
Steps
-
Cut potatoes into cubes, soak in water and set aside
-
Add an appropriate amount of ginger to the duck meat and stir-fry the water (no need to add oil, stir-fry directly). Stir-drying can not only remove the fishy smell of the duck, but also tastes very fragrant.
-
Stir dry the duck meat and set aside
-
Put rapeseed oil in the pot, when the oil boils, add appropriate amount of ginger, garlic, light soy sauce and Pixian bean paste and stir-fry until fragrant
-
Add duck meat and stir-fry until brown
-
Add the drained potatoes and stir-fry evenly
-
Add enough water to just cover the potatoes
-
After the water boils, add an appropriate amount of chicken essence and salt and simmer over low heat (add an appropriate amount of salt, Pixian Douban with salt)
-
If there is too much soup, just turn up the heat and simmer for a while
-
Once the potatoes are cooked, remove from the pot and add appropriate amounts of green onions and coriander
-
Is it healthier to not have too many seasonings?
-
It's really fragrant, without the fishy smell of duck.
