Overview
Today's recipe is really special. Mainly because the rainy season has not yet come and the weather is very hot. I want to make some refreshing side dishes to appetize everyone. Mushrooms are usually stir-fried or made into soup. This method of stir-frying and mixing suddenly came to mind. I didn't expect it to taste good. Although it is stir-fried, it is not greasy at all. It not only has the freshness and sweetness of shiitake mushrooms, but also the light fragrance of lemon in it.

Remove the stems of the mushrooms, wash them and cut each into four pieces. Set aside.

Remove the stems from the enoki mushrooms, wash them and set aside.

Cut the red pepper into strips, slice the garlic, and cut the coriander into sections and set aside.

Heat the wok, add cooking oil to heat, add garlic slices and stir-fry until fragrant, add shiitake mushrooms and enoki mushrooms and stir-fry until cooked.

Add salt, cooking wine and pepper and stir-fry evenly.

Add the red pepper strips and stir-fry until cooked through, then turn off the heat.

Turn off the heat, let the mushrooms cool slightly, add the coriander segments and mix well.
